By 2023, the problem demanded more than curiosity. It needed structured experimentation. Living in regional NSW, I realised I couldn’t keep outsourcing my energy to guesswork. So I took a scientific approach: remove variables, analyse the inputs, and understand how different beans and roasting methods influence cognitive performance.

I bought a roaster, sourced premium greens, and spent ten months running controlled trials. I studied how roast development affects caffeine release, how origin and density influence clarity, and how acidity, solubility, and extraction shape the subjective experience of focus. It wasn’t just tasting coffee. It was building a framework for what makes coffee functional.

Those months of testing led to our first release, Saturday Light Roast, a single-origin Australian coffee engineered for clean energy, stable focus, and minimal crash. It was the first cup in years that worked with my physiology instead of fighting it, and it proved that the problem I had been battling had a solvable root.
